Super Baking Day

Today I was an afternoon of baking. For several reasons....
1. Starting Thursday I am working 7 days in a row.
2. Josh requested some stuff.
3. I haven't had a "baking day" in quite some time and I enjoy it.
4. We needed some good snacks around the house.

With that said, I had 4 items on my list for the afternoon. No-bake energy bites, granola (Josh's request), peanut butter pretzel bars, and frozen lemonade squares (Katelind I just had to make them today!!). This was my first time making all of these recipes and I must say they all turned out perfect! I put the link to each recipe below the pictures, Enjoy!!

No-Bake Energy Bites
(I used a little bit less cho. chips than suggested)


Homemade Granola
(I made a few changes per Josh's request - no almonds, no figs of apricots and instead put in some of our dehydrated peaches)

Peanut Butter Pretzel Bars
(the only change here was I used unsalted peanuts)


Frozen Lemonade Squares
We had this last night at bible study and felt it was a must to make today! It is very refreshing on hot summer days! 
(some of the crust got mixed in with the lemon filling but it all tastes the same right?? Also, the link to recipe is below otherwise it is on the back of the Honey Maid graham cracker box)

A Peachy Time

This past Friday morning Josh and I were both off work so we decided it would be the perfect time to go peach picking. We have gone to Collins Orchard (outside of Conway) the past 2 years and have loved it! We picked a bunch and brought them home to make some yummy stuff (see below). All in all it was a wonderful 'day date' with my hubby.

We ended making lotsof peach butter, 4 quarts of peach pie filling, dehydrated peaches and 2 gallon size bags of frozen peaches. Of course we kept some fresh peaches to eat as well!

I have to give a BIG shout out to my amazing husband. I worked Friday night in the ER, while I was gone he made the peach butter and dehydrated some of the peaches! Thanks for all your hard work!

Catching Up

Well the last couple weeks since getting home have been busy, here are a few highlights. 

1. Josh's 26th birthday was on June 22nd. Josh's two requests for his birthday were to have a relaxing day at home and that I make his favorite popcorn cake. Done and done! I didn't get pictures, but Josh had been asking for a good set of paring and chopping knives. I found some Wusthof knives online and he LOVES them!

2. Josh and I went on a fun date to see comedian Tim Hawkins Live at our church. We had a wonderful time and of course had lots of laughs. 

3. LISA AND MICHAEL CAME TO VISIT! This was their first time to Arkansas so we did the 'tourist' thing while they were here. We spent time at the River Market downtown, Old Statehouse Museum, The Peabody, Central High and Big Dam Bridge. Of course we had to  take them to some of our favorite restaurants, Whole Hog, Big Orange and Larry's Pizza. Lisa and I also made a quick and fun Pinterest craft (see below). 

Josh and I LOVED having you two and can't wait until next time you visit! Family is such a blessing!
